An exciting opportunity for a Postdoctoral Research Assistant in Consumer Science and Food Marketing to join the UKRI funded: Increasing UK Dietary Fibre - The Case for the Great White British Loaf’ project (part of the Transforming the UK Food System for Healthy People and a Healthy Environment programme). This project comprises a team of academics and members of the UK wheat supply chain focused on investigating how the UK can sustainably transform to supplying fibre-rich white bread to UK consumers. White bread accounts for 76% of bread purchased in the UK with around 12 million loaves being sold each day. Its high popularity, the need for increased fibre in the diet, slow acceptance of changes to high dietary fibre offerings (e.g. from white to wholegrain), means increasing the fibre content of white bread is highly likely to assist in increasing overall UK dietary fibre intake.

You will join an enthusiastic group of food and behavioural scientists, food marketers, economists, wheat experts and mathematical, climate and food chain modellers based at the Universities of Reading and Leeds and Rothamsted Research, working with industrial members and their representative bodies across the UK wheat supply chain. You will be one of seven PDRAs working across the project to inform the development of the fibre-rich white British loaf and mathematical models to inform sustainable transformation of the UK wheat chain to supply it.

The successful candidate will contribute to the consumer and marketing research from the consumer valuation to the development and evaluation of the breads.

We are seeking a highly-capable and highly-motivated individual with excellent organisational and communication skills to work as part of this multi-disciplinary team.

The successful candidate will have:

  • excellent organisational skills, able to coordinate multiple activities simultaneously while maintaining attention to detail;
  • excellent oral and written communication skills, able to support successful collaboration between the project partners and  write scientific reports for dissemination;
  • experience of and a high level of understanding of consumer food, and quantitative consumer experiments;
  • a PhD in Consumer Science/Food Marketing/Agricultural Economics or a closely allied discipline.
